Free and Simple Life

I was celebrating my daughters birthday on Sunday at a spa where I joined in on the fun and got a pedicure. And at the spa I was flipping through the November 23, 2015 issue of HELLO magazine and something in it really resonated with me. There was an article about Angelina Jolie and in a section she was quoted saying “If something inconveniences my children or takes me away from them in a bad way, I won’t do it.”

That stuck with me because that is exactly how I live my life. Once I was so distracted and too busy and upset to see the simple things in life. I was tied up in the drama of the world, gravitating to the news on T.V like a light in my room. I ran here there and everywhere and never really got much accomplished from my never ending to do list. I always knew there was a better way, but I just didn’t know how to get there. Until one day…I remember this day so vividly. I had picked up Julie Boyer’s book on 30 Days to Gratitude and that was what changed for me. I was reading the chapter on a vacation away with my husband on Finding your Life’s Purpose…And as we both took some time writing out what it was; it took me away from what I was doing in my chaotic life to leading a more simple, easy and free life. My purpose was for my children.

And as I read Angelina’s quote with her busy and successful career…it all boils down to one thing. My simple life is because of my children. The simple way they want to cuddle me and spend time with me. The questions they ask and the excitement I see when I walk towards them after school. When I tickle them, hug them or look in their eyes to listen to their story. That is what life is about for me. No money or things are needed to produce this simplicity and happiness.

Holy Moly Freezer Meals

We made 261 meals last night at Freezefest in 1.5 hours.  What an amazing evening.  Each guest receives a recipe upon registering for the Fest and brings it prepared to the party.

The party consists of assembling meals and listening to a great guest speaker.  Lastnight Binu Dhindsa from Shape your Life spoke to us about our Inner Pilot Light.   She was fantastic.  And we all got to go home with 17-22 meals to pop right into our freezer.

Avocados for Breakfast Anyone?

I’ve done it…I have officially made avocados on toast a new breakfast option for those of you who have done my 6 week program.  I am craving avocados these days and I often go in modes where I crave a certain food for a period of time and then I am good if I never see it again.  Beets was a couple of weeks ago…I ate so many and now I can’t seem to find an appetite for them (although I know I will again).

Why you ask?  Just like children who eat one thing for days on end and then suddenly quit, we too do the same.  Our bodies need the iron from beets at certain times or the essential fatty acids from avocados.

So because I am craving I wanted to share my easy breakfast option with you.  Here we go:

Ingredients:

2 slices of bread toasted (I have been using All but Gluten Bread)

1/2 an avocado mashed

6-8 grape tomatoes or 1 small sliced tomato

pepper

1 tbsp Butter or Mayonnaise

 

Spread butter or Mayonnaise on toast,  Spread mashed avocado and grape tomatoes on top.  Season with pepper.
