Lunch Time Quickie

Here is my lunch time quickie for today.  When I work from home and in between clients I often want meals that are fast and easy to grab.  Along with my Freezer Meals (my next party is Wednesday January 6th 7:30 – 9:00pm in Oakville, please register by sending me an email to nutrition@highwaytohealth.ca) I enjoy the Imagine Soup line.  The soups are free of msg, additives, gluten and they are low sodium.  I grabbed a box last week when they were on sale at Fortinos (found in the health food section).  This box will last me a couple more meals.  I serve with gluten free toast for dipping or a side salad.  MMMmmm, hot and delicious!

Coconut Mango Chicken

I made this delicious dish last night which was a family favourite and I was able to freeze half of it for another meal down the road.

 

Ingredients:

Sauce (whisk ingredients below together and set aside):

1 1/4 cups coconut milk

1 tbsp grated ginger

1 tbsp Braggs

1 tbsp brown sugar

1 tbsp Asian fish sauce (stinks but makes the dish)

2 tbsp H2H secret seasoning (found in the H2H recipe box, order your box by emailing us)

1 tbsp freshly squeezed lime juice

1 tsp fresh minced garlic

 

In Pan (Heat oil and brown chicken breast, and remove from pan):

2 tsp sesame seed oil

4 boneless skinless chicken breasts cut into strips

 

Add to pan (soften vegetables and add back in chicken and sauce and cook for 3-4 minutes until cooked through):

1 red pepper cut into strips

4 green onions chopped with green parts and white parts

 

Add remaining ingredients to pan and heat through:

1/2 cup frozen peas

1/2 cup coarsely chopped fresh basil

1 medium sized mango peeled and diced

 

Serve with Basmati rice or brown rice
